Strawberry Shortcake Protein Mug Cake

This protein mug cake recipe is so easy and delicious! Its similar to my basic mug cake recipe with some substitutions. I made this for my roomates while we watched the bachelor wedding and it was a hit!

– 2 tbs protein powder (for this recipe i chose vanilla)

– 2 tbs coconut flour

– 3 tbs mashed strawberries (Make sure they are as mashed as possible. Use a food processor if you have one.)

– 2 tbs vanilla almond milk

– 3 tbs egg whites

– a touch of stevia

Clean frosting recipe:

Mix together Greek yogurt and protein powder until you get a frosting like consistency (I chose vanilla protein powder). If you do not like greek yogurt you can substitute regular yogurt but it will not necessarily be clean.

So when Its not the super bowl or a birthday I live a very healthy lifestyle. This includes a clean diet. And when i say diet i don’t mean diet as in trying to lose weight. I mean eating clean healthy foods to give my body the best it deserves. Sometimes the hardest thing about living a clean healthy lifestyle is giving up sweets. Fighting those cravings can be hard! I am no nutritional expert by any means. But i have gained a lot of knowledge on nutrition being a devision one athlete working very close with some of the best trainers and nutritionists in the country. So one of the most valuable things i have learned through the years is that a clean and healthy diet will change your life. It won’t just change how you look but how you feel. So its always great to have recipes that help you stay on track. Thats why i love mug cakes! You can make them as clean as you want and they are delicious. Of course they aren’t going to taste like your typical cake but they will satisfy your sweet tooth for sure! I came across protein mug cakes on Instagram and Pinterest. After trying many recipes i decided what ingredients i prefer and which taste best together. It is very easy to play around with your recipes to make different flavors.

Protein Mug Cake:

– 2 tbs protein powder (I chose Dulce de Leche)

– 2 tbs coconut flour

– 2 tbs apple sauce

– 2 tbs vanilla almond milk

– 3 tbs egg whites

– A touch of stevia if needed

Frosting:

Mix greek yogurt and protein powder until you get a frosting like consistency. I added a touch of vanilla extract and stevia. If you do not like greek yogurt use regular yogurt. It won’t be clean but it will still be low in calories!

 

Super Bowl Party the College Girl Way

Football Strawberries

So this following Sunday was the super bowl as well as my roomies birthday. Both of us are huge football fans. Especially for girls.. So of course we treated it like a holiday. I’m not a huge NFL fan, i prefer college football, but moma is a die hard Broncos fan so I of course am genetically required to be a Broncos fan win or lose! My roomie being from Seattle is of course a Sea Hawks fan. So as much as it killed me I decorated with blue and green for the sake of her birthday. Luckily birthday decorations over powered the Sea Hawks decorations so it all worked out.. But our favorite part about the day was of course baking and cooking goodies for our friends to enjoy.

Typically our kitchen consists of fresh fruits and veggies but we figured we would toss all our our healthy living to the side for just one day. I think it is very important to have a balance. It is so easy to get obsessed and caught up in the way you eat. For me healthy is a lifestyle but i don’t let it get in the way of my life. What fun would it be to have people over and serve our healthy clean recipes when most of our friends don’t eat the things we do and live the lifestyle we live? Me and my roomie are both creatives and enjoy hosting parties so your typical hot dogs and beer cans where not about to make an appearance to our party. Instead we made home made guacamole and made hummus nachos with prosciutto and pomegranate inspired by our favorite local Wine bar. The birthday girl drank from a yard long glass that said first down, second down, third down, and touch down. She made a touch down of course and so did her team.. Over and over again. You could say us Bronco fans ended up much more sober. Another fun football themes drink we found was from Get Creative Juice.com Something about a fun themes drink makes it so much better! To go with our themes cocktails we made blue cake pops that pleased both Sea Hawk and Broncos fans. We also turned chocolate covered strawberries into footballs. This made the girly treat a little easier for the boys to digest.

The typical manly holiday had gotten a crafty college girl makeover and it ended up being a success with both happy girls and boys. Some of us happier then others depending on what colors we were wearing. I of course was one of the least happy but those cake pops sure did help ease the pain of such a terrible game.

Who am I?!

Good morning lovelies,

My name is Alecia Occhipinti and today is the day I enter the blogosphere to share everything in this distractedly driven head of mine. Woo, big moment! I am very excited to begin a journey in blogging and sharing my life with whomever finds it interesting, entertaining, and hopefully even inspiring. I am originally from Orange County, California and I grew up somewhat of a stereotypical southern California lifestyle. I surfed almost every day and passed my days at the beach with friends and family until obligations took over the day. My biggest stresses some days were how many hours of beach time could I get before gymnastics practice. My family is amazing and I will never be able to thank them for everything they blessed me with. My family is one of my biggest passions you will probably hear me talk about them often. My amazing parents were my best friends, and my amazing sister who could not be more opposite of me, but we complete each other. My parents have raised me to have a golden work ethic while inspiring me to grow creatively. I was a much harder worker then your typical teenager. I trained competitive gymnastics 25 hours a week, and took on track, and competitive cheerleading as well as a job. These years leading up to moving away on my own have played a large part in shaping me but a lot has changed since then. I am somewhat young but i have sure gone experienced a lot in my days. In just the past year I have gone from being a tumbling star at Baylor University with an athletic scholarship to your average Arizona State University student that waits tables part time. But I would like to think of myself as anything but average. Through my short time in my adolescence I have become exactly who I was meant to be and who I want to be. Although I always have growing to do, but that’s what makes life beautiful to me. I am constantly growing in my self identity and everyday I find inspiration that influences my life. This blog is inspired by my journey since leaving Baylor University and my ongoing journey to finding myself and finding what makes life beautiful to me everyday. I have done a lot of soul searching and growing since realizing how much of my self identity was built around my title as a division one athlete and i am excited to share this journey with you through my passions of fitness, food, creativity, and design.
