Easter cookies!

So I had to share the cookies my mom made. Unfortunately I can’t physically share with y’all because they are delicious! She decorates cookies for every occasion and they are always so adorable. Her and my dad seam to have fun finding anything to entertain themselves now that both my sis and I are living away from home for school. My momma gets my dad to join in on her “crafts” even the bunny cookies.

Chili Relleno Recipe

Cooking can be a enjoyable but a pain in the ass. I find myself going out to eat so often because I just LOVE it. Its one of the most enjoyable things to me to go out for great food and drinks with friends.I enjoy food so much more when it is a social event. But lately my boyfriend and I have been feeling the damage to our wallets and our healthy lifestyle. It is so difficult to eat healthy at restaurants! So we talked and decided its time to dedicate some time to cooking delicious healthy versions of our favorite restaurant meals. So you can look forward to many more recipes. But our first recipe this week is a chile relleno inspired by our favorite chili relleno from Z’tejas. Z’tejas makes the best chille relleno I have ever had.. But it is not the healthiest thing on the menu even though it is low in carbs. It is filled with cheese and smothered in creamy calorie filled sauces. We created a low calorie version that was absolutely delicious!

1 Poblano Pepper per chili relleno.

1 half of a chicken breast per chili relleno

Goat cheese

1 mango

Sauce

greek yogurt

1 lime

1 garlic cloves

1 Chipotle Pepper

Directions: Set oven to broil and roast poblanos until they are blackened. This takes about 30 minutes and you should turn over the poblanos half way through. While you are roasting the poblanos boil chicken until they are ready to shred. Once they are done cooking let them cool until you can shred them with your hands. Once the chilled are done put them in a plastic bag for ten minutes until they sweat out the rest of the moisture. Then remover them from the bag and remove the skin. The skin should be easy o remove at this point. next cut a slit in the poblano and remove the seeds. Then stuff the poblanos with the shredded chicken, goat cheese, and pureed mangos. Don’t be afraid to add a good amount of mango. The sweetness pairs perfectly with the heat in the creamy sauce. Add salt and Pepper to taste. I like to add a touch of Chilli powder.

Once the poblanos are stuffed put them in the oven at 350 and bake for 20 minutes. While the chili rellenos are baking put one cup of plain non fat greek yogurt in a blender or professor. Add juice from one lime, one chipotle pepper, and one garlic clove. Then blend the ingredients into a sauce. You will put this on top of the chili rellenos once they are done.

I paired the chili rellenos with fat free refried beans. I added salt, pepper, fresh garlic, and chili powder to my brand. I skipped the spanish rice to cut carbs. Black beans pair well with this recipe as well.

 

 

Crafting Inspiration!

So one thing I absolutely LOVE to do it crafting. Not your average crafting that keeps kids entertained but advanced crafting. I find so much joy in creating beautiful things. I craft anything from clothing to furniture and decorations. Its so much more satisfying crafting things rather then buying things how they come. I think its actually a very valuable skill. Advanced crafters have a lot of potential to save money. Another term for this is D.I.Y. Looking up D.I.Y.s on pinterest is one of my favorite things to do. I personally find it completely addicting.. Its so much fun getting ideas and inspiration. But it would be even more inspiring to go to a crafting trade show. The crafting trade show I would love to attend it The 2015 CHA MEGA show. CHA is the Crafting and Hobby Association. The reason I would love attending this MEGA show is because I believe my crafting skills are up to par with the best. I think my first year of attending I would just want to check it out and get inspired. But the following year I would love to actually be apart of the show. I think I would be a good fit for this show and people would respond well to what I create. I would love the opportunity to network with creative who have created a business out of what they make. I would love to hear about how they got started and what makes them successful.Image

Memory book

So going through old photos is always refreshing. I hate feeling like im forgetting about big moments in my life it always breaks my heart when I come across photos from a large event in my life and I realize I have forgotten about it. The other day i was going through photos in my old laptop and came across my missions trip to Kenya. It was life changing in many ways and i documented every bit of it and somehow already forgot about it. Not like I dont remember it I will never forget it.. But its been a while since I thought about it. Going through photos reminded me of how passionate i used to be about photography and traveling and of course how passionate I was about my missions work. I was blessed enough to spend nearly a month exploring the beautiful Masai Mara and doing missions work around Kenya. I wanted to share some photos with you all.
